Really only 1 of the regular goldfish. the regular goldfish, (comets, common, feeder) get to be 12+ inches so will require at least 20 gallons for one fish and at least 40 for two.
The fancy ones also get very large (at least 6 inches) and require lots of space too.
I do not know of books but I know they are out there of course. You can go here though: http://www.peteducation.com/article.cfm?… and here:http://www.firsttankguide.net/capacity.p…
Here is a pic to show you how big they can get: http://img.thesun.co.uk/multimedia/archi…
Hope this helps.

I'd go with two with good filtration and nice decor. They get big and are very messy.
As for fish books, just get as recently published as possible and if there are any magazines, pick those up too. More recent ones will be more up to date with current technology and theories.
Remember that you need to put the tank through the nitrogen cycle for 2-6 weeks before any fish can be added!
